- 1 tablespoon olive oil
- 1 pound bulk sweet Italian sausage
- 1 small fennel bulb, trimmed, shaved, fonds reserved
- 1 shallot, , chopped
- 1-1/4 pounds uncooked refrigerated cheese tortellini
- 1 jar (24.7 ounces) Bertolli^® d'Italia Marinara Sauce
- ¼ cup grated Romano cheese
Directions
- Step 1: Heat oil in large skillet on medium-high heat. Add sausage; cook 5-7 minutes or until browned, breaking up large pieces with wooden spoon. Reduce heat to medium; add fennel and shallots. Cook 8-10 minutes or until softened and caramelized, stirring frequently. Stir in sauce; mix until heated through.
- Step 2: Meanwhile, cook tortellini as directed on package. Drain, reserving ½ cup pasta cooking water. Add tortellini to sauce mixture in skillet. Mix gently while adding reserved pasta water as needed until combined. Sprinkle with reserved fennel fronds and cheese before serving.
