Slow Cooker Chicken Cacciatore
Easy and delicious, this slow cooker meal will quickly become a family favorite. Savor every flavorful bite of chicken cooked with Sweet Pepper and Portobello Mushroom sauce, vegetables, garlic, and onion. Serve over a bed of spaghetti and enjoy.
boneless, skin-on chicken thighs, trimmed
kosher salt, divided
1 - 1/2 teaspoons
black pepper, divided
® Extra Virgin Olive Oil Rich Taste
cloves garlic, sliced
large yellow onion, sliced
1 jar (24 ounces)
® Rustic Cut™ Sweet Peppers and Portobello Mushroom Sauce
green bell pepper, sliced
red bell pepper, sliced
brown mushrooms, quartered
pitted Kalamata olives
spaghetti, cooked and drained
shaved Parmesan cheese
Step 1: Season chicken with 2 tsp. salt and 1 tsp. pepper. Heat oil in large skillet on medium-high heat. Add chicken, skin-side down. Cook 2-3 min. on each side or until golden brown. Remove chicken from skillet.
Step 2: Add onions to same skillet on medium-high heat. Cook 5-7 min. or until translucent, stirring often. Stir in garlic; cook 30 seconds. Transfer mixture to slow cooker.
Step 3: Add sauce, bell peppers, mushrooms, olives, capers, thyme, bay leaf, 1 tsp. salt and ½ tsp. pepper to onion mixture in slow cooker. Stir well. Nestle chicken into sauce; top with lemon slices. Cover with lid. Cook on HIGH 4 hours (or on LOW 8 hours). Remove bay leaf.
Step 4: Serve pasta topped with chicken, sauce, parsley and Parmesan.
