Blackberry Limoncello Cake

Ingredients

For the Cake

• 2-1/2 cups of all purpose flour
• 2 teaspoons of baking powder
• 1/2 teaspoon of salt
• 1 teaspoon of vanilla extract
• 1 cup of granulated sugar
• 4 eggs
• 1/2 cup Bertolli^® Extra Virgin Olive Oil Rich Taste
• zest of 1 lemon
• 1/4 cup of freshly squeezed lemon juice
• 1 cup of whole milk
• 1/3 cup of blackberry preserves

For the Cream

• 1/2 cup of Mascarpone, softened at room temperature
• 3/4 cup of heavy cream, whipped to soft peaks
• 1/3 cup of confectioners sugar
• Zest of 1/2 lemon
• 2 teaspoons of fresh lemon juice
• 2 tablespoons of limoncello
