Chocolate Butterscotch Blondies
Put a spin on your go-to cookie or brownie recipe and try blondies instead! These Chocolate Butterscotch Blondies are baked with olive oil so the sweet, buttery flavor shines through. These are also great as party favors!
Step 1: Preheat oven to 350°F and generously spray a 9x9x2" baking pan with olive oil spray. In a large mixing bowl, combine brown sugar, baking powder, baking soda, walnuts, sea salt and flour. Add eggs and olive oil to the dry mixture, and blend with a heavy electric mixer on low speed until thoroughly combined.
Step 2: Add milk, orange zest, and vanilla extract, and mix until just incorporated. Be careful not to over mix. Using a sturdy spatula, transfer the cookie dough to the greased baking pan and smooth out. Sprinkle butterscotch and chocolate chips on top of the cookie dough, then lightly sprinkle with approx 1 - 1-1/2 teaspoons of sea salt.
Step 3: Bake for 35-40 minutes, or until a toothpick inserted into the middle of the pan comes out clean. Remove pan from oven and cool on wire rack at least 30 min before cutting into squares.
