Rosemary
Aromatic rosemary is a favourite to flavour oil, vinegar and baked foods. A traditional accompaniment for lamb, pork, sausages and other rich meat dishes, the leaves may be removed before serving.
Sage
Bold, pungent sage is a favourite complement for strongly flavoured foods, especially stews and meat dishes. Sage can be used fresh or dried, but must be of the highest quality or it will acquire an unpleasant, musty flavour.
