1 onion

1 small cabbage

4 tablespoons BERTOLLI Extra Virgin olive oil

Salt and pepper

8 slices loin of pork, well flattened out

8 slices smoked ham

8 thin slices gruyere cheese

200ml (7 fl oz) stock

100ml (3 1/2 oz) white wine

This dish is a classic Italian country home recipe for the cold days of winter.

Slice the onion finely. Cut the cabbage into thin strips.

Heat 2 tablespoons of BERTOLLI Extra Virgin olive oil in a sauté pan and sweat the onions and cabbage until tender. Season lightly with salt and pepper.

Meanwhile put the pork slices flat on a tray. Put a slice of ham, followed by a slice of cheese on top of each pork loin. Roll each loin up tightly and secure with a toothpick.

Heat the remaining 3 tablespoons of BERTOLLI Extra Virgin olive oil in a sauté pan and fry the pork rolls on all sides until well seared. Pour the stock and the wine over the rolls. Cook without a lid until the liquid is reduced by 1/3. Serve with the cooked cabbage.

Complete the meal with bread and fresh fruit.

You can steam some whole cabbage leaves and wrap them around the fried pork rolls with ham and cheese. You can also add some sage leaves while sautéing the onion and cabbage.
